Ingredients

  • Cedar plank - 1 (for soaking)
  • Salmon fillet - 200 grams
  • Coconut milk - 250 ml
  • Cauliflower - 150 grams (chopped into florets)
  • Carrot - 1 medium (diced)
  • Celery - 1 stalk (diced)
  • Onion - 1 small (diced)
  • Garlic - 2 cloves (minced)
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh dill - 1 tablespoon (chopped)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the cedar plank in water for at least 30 minutes.
  2. Preheat your grill or oven to 180°C (350°F).
  3. In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until softened.
  4. Add minced garlic and chopped cauliflower to the pot, cooking for another 3 minutes.
  5. Pour in the vegetable broth and bring to a simmer. Cook for approximately 10 minutes or until the cauliflower is tender.
  6. While the soup simmers, place the soaked cedar plank on the grill or in the oven. Lay the salmon fillet on top, season with salt, pepper, and half of the fresh dill, and cook for about 15 minutes or until the salmon is cooked through.
  7. Once the vegetables are tender, stir in the coconut milk and let the chowder heat for another 5 minutes.
  8. Flake the cooked salmon into bite-sized pieces, then gently fold it into the chowder.
  9. Serve hot, garnished with the remaining fresh dill.
