- Curry leaves - 8-10 leaves
- Coriander leaves - 2 tablespoons (chopped)

Steps
- Heat oil in a pan over medium heat and add mustard seeds; let them splutter.
- Add cumin seeds, curry leaves, and chopped onions; sauté until onions turn translucent.
- Stir in the grated ginger and green chili; cook for another minute.
- Add the chopped carrots and green peas; sauté for 3-4 minutes until slightly tender.
- Sprinkle in the turmeric powder and salt; mix well.
- Add the grated cauliflower and mix until all ingredients are well combined.
- Cover the pan and cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat and add lemon juice and chopped coriander leaves; mix gently.
