- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Fresh cilantro - 2 tablespoons (chopped for garnish)
- Water - 100 milliliters
Steps
- Begin by ricing the cauliflower using a food processor or grater until it resembles rice grains.
- In a large skillet or pan, heat the coconut oil over medium heat and add cumin seeds. Sauté for about 30 seconds until fragrant.
- Add the finely sliced onion and sauté until it turns golden brown.
- Stir in the ginger, garlic, and green chili, cooking for an additional 2-3 minutes until aromatic.
- Add the chopped tomato and mixed vegetables to the pan, cooking until the tomatoes soften.
- Sprinkle in the biryani masala, turmeric powder, coriander powder, and salt. Mix well and cook for another 2 minutes to combine the flavors.
- Add the riced cauliflower to the pan, mixing it thoroughly with the spices and vegetables.
