Ingredients
- Cauliflower - 200 grams
- Mozzarella cheese (shredded) - 100 grams
- Parmesan cheese (grated) - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tandoori masala - 1 tablespoon
- Tomato sauce - 4 tablespoons
- Bell pepper (sliced) - 1/2 medium
- Red onion (sliced) - 1/4 medium
- Spinach (fresh) - 1 cup
- Olive oil - 1 tablespoon
- Fresh coriander (for garnish) - a handful
Steps
- Preheat the oven to 220°C (425°F).
- Wash and chop the cauliflower into florets, then steam for about 5-7 minutes until tender. Allow to cool slightly.
- Using a food processor, pulse the steamed cauliflower until it resembles a fine rice-like texture. Transfer to a clean kitchen towel and wring out excess moisture.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, cumin, salt, and black pepper. Mix well to form a dough.
- On a baking sheet lined with parchment paper, shape the cauliflower mixture into a round pizza crust approximately 1/2 inch thick.
- Bake the crust in the preheated oven for about 15-20 minutes, or until golden and firm.
- While the crust is baking, prepare the toppings by sautéing the sliced bell pepper and red onion in olive oil until slightly softened, about 3-4 minutes. Add the spinach and cook until wilted.
- Once the crust is ready, spread the tomato sauce evenly over the top, then layer with the sautéed vegetables.
- Sprinkle additional mozzarella cheese on top, then return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh coriander, slice, and serve warm.
