  • Garlic powder - 1 teaspoon

  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tandoori masala - 1 tablespoon
  • Tomato sauce - 4 tablespoons
  • Bell pepper (sliced) - 1/2 medium
  • Red onion (sliced) - 1/4 medium
  • Spinach (fresh) - 1 cup
  • Olive oil - 1 tablespoon
  • Fresh coriander (for garnish) - a handful

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam for about 5-7 minutes until tender. Allow to cool slightly.
  3. Using a food processor, pulse the steamed cauliflower until it resembles a fine rice-like texture. Transfer to a clean kitchen towel and wring out excess moisture.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, cumin, salt, and black pepper. Mix well to form a dough.
  5. On a baking sheet lined with parchment paper, shape the cauliflower mixture into a round pizza crust approximately 1/2 inch thick.
  6. Bake the crust in the preheated oven for about 15-20 minutes, or until golden and firm.
  7. While the crust is baking, prepare the toppings by sautéing the sliced bell pepper and red onion in olive oil until slightly softened, about 3-4 minutes. Add the spinach and cook until wilted.
  8. Once the crust is ready, spread the tomato sauce evenly over the top, then layer with the sautéed vegetables.
