Ingredients

  • Cauliflower florets - 300 grams
  • Cheddar cheese, grated - 100 grams
  • Cream cheese - 50 grams
  • Unsweetened almond milk - 100 ml
  • Garlic powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Paneer, cubed - 100 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Steam the cauliflower florets for about 5-7 minutes until tender, then drain and let cool slightly.
  3. In a blender, combine the steamed cauliflower, cream cheese, almond milk, garlic powder, garam masala, turmeric, salt, and black pepper. Blend until smooth and creamy.
  4. In a skillet, heat the olive oil over medium heat. Add the cubed paneer and sauté until golden brown. Remove from heat.
  5. In a mixing bowl, combine the cauliflower sauce with the sautéed paneer and grated cheddar cheese. Mix well.
  6. Transfer the mixture to a baking dish and sprinkle some extra cheddar cheese on top.
  7. Bake in the preheated oven for about 15 minutes or until the top is bubbly and golden.
  8. Garnish with fresh coriander before serving.
