  • Coconut milk - 200 ml
  • Spinach - 100 grams, fresh

  • Fresh cilantro - for garnish

Steps

  1. In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the curry powder, cumin, and coriander to the skillet, stirring well to combine and cook for 1 minute to release the spices' aromas.
  4. Pour in the tomato puree and coconut milk, stirring to create a smooth sauce. Allow it to simmer for 5-7 minutes, stirring occasionally.
  5. Meanwhile, in a separate pot, boil water and cook the cauliflower gnocchi according to package instructions, usually around 2-3 minutes or until they float.
  6. Once cooked, drain the gnocchi and gently add them into the curry sauce. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Season with salt and black pepper to taste. Remove from heat and let it sit for a minute.
