Ingredients

  • Cattail roots - 200 grams
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Clean and peel the cattail roots, then chop them into small pieces.
  2. In a pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Add the minced garlic and chopped cattail roots to the pot, cooking for an additional 2 minutes.
  4. Pour in the vegetable broth and add the thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes until the cattail roots are tender.
  5. Remove the bay leaf and stir in the coconut milk. Blend the chowder using an immersion blender until smooth, or carefully transfer to a blender in batches.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
