- Chopped nuts (walnuts or pecans) - 30 grams
Steps
- Begin by thoroughly washing the cattail roots to remove any dirt or debris.
- Peel the cattail roots and chop them into small pieces.
- In a pot, add the chopped cattail roots and cover them with water. Bring to a boil and then simmer for 15-20 minutes until tender.
- Drain the cattail roots and let them cool slightly, then blend them into a smooth paste using a blender.
- In a mixing bowl, combine the cattail paste with coconut milk, honey, vanilla extract, cinnamon, and salt. Mix well until smooth.
- Pour the mixture into a small saucepan and cook over low heat, stirring continuously for about 10 minutes until it thickens.
- Once thickened, remove from heat and let it cool for a few minutes.
- Divide the pudding into two serving bowls and top with chopped nuts.
- Refrigerate for at least 10 minutes before serving to allow it to set slightly.
