Ingredients

  • Cattail shoots - 200 grams, chopped
  • Fresh corn kernels - 150 grams (about 1 cup)
  • Almond flour - 100 grams (about 1 cup)
  • Ground flaxseed - 20 grams (about 2 tablespoons)
  • Water - 120 ml (1/2 cup)
  • Olive oil - 15 ml (1 tablespoon)
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 grams, chopped
  • Red onion - 50 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the almond flour, ground flaxseed, garlic powder, salt, and black pepper.
  3. Gradually add the water and olive oil, mixing until a dough forms.
  4. On a parchment-lined baking sheet, flatten the dough into a round pizza shape, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 10 minutes until slightly golden.
  6. In a separate bowl, mix the chopped cattail shoots, corn kernels, red onion, and cherry tomatoes together.
  7. Remove the crust from the oven and evenly distribute the vegetable mixture over the top.
  8. Sprinkle the chopped basil over the vegetables.
  9. Return the pizza to the oven and bake for an additional 15 minutes, or until the vegetables are tender.
  10. Remove from the oven, let cool for a few minutes, slice, and serve warm.
