  • Cabbage, finely chopped - 200 grams
  • Coconut, grated - 50 grams
  • Onion, finely chopped - 50 grams
  • Green chili, slit - 1
  • Ginger, grated - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 6-8 leaves
  • Olive oil - 1 tablespoon
  • Eggs - 2
  • Salt - to taste
  • Pepper - to taste
  • Cheese (optional, for topping) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat and add mustard seeds. Once they start to splutter, add curry leaves, chopped onions, ginger, and green chili; sauté until onions are translucent.
  3. Add the chopped cabbage, turmeric powder, and salt; cook for about 5-7 minutes until the cabbage softens.
  4. Stir in the grated coconut and mix well; cook for an additional 2-3 minutes, then remove from heat.
  5. In a mixing bowl, beat the eggs and season with salt and pepper.
  6. Combine the cabbage mixture with the beaten eggs until well mixed.
  7. Transfer the mixture to a greased baking dish and spread evenly. If using, sprinkle cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and the eggs are set.
  9. Remove from the oven, let it cool for a few minutes, then slice and serve warm.
