- Curry leaves - 6-8 leaves
- Olive oil - 1 tablespoon
- Eggs - 2
- Salt - to taste
- Pepper - to taste
- Cheese (optional, for topping) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat olive oil over medium heat and add mustard seeds. Once they start to splutter, add curry leaves, chopped onions, ginger, and green chili; sauté until onions are translucent.
- Add the chopped cabbage, turmeric powder, and salt; cook for about 5-7 minutes until the cabbage softens.
- Stir in the grated coconut and mix well; cook for an additional 2-3 minutes, then remove from heat.
- In a mixing bowl, beat the eggs and season with salt and pepper.
- Combine the cabbage mixture with the beaten eggs until well mixed.
- Transfer the mixture to a greased baking dish and spread evenly. If using, sprinkle cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and the eggs are set.
- Remove from the oven, let it cool for a few minutes, then slice and serve warm.
