Ingredients

  • Cabbage - 200 grams, finely chopped
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Black pepper powder - 1/4 teaspoon
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds.
  2. Add the chopped onion, garlic, ginger, and green chili. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced tomato, turmeric powder, coriander powder, and black pepper. Cook for another 2-3 minutes until the tomato softens.
  4. Add the chopped cabbage and carrot to the pot, mixing well with the spices. Cook for about 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the vegetables are tender.
  6. Season with salt to taste and garnish with fresh coriander leaves before serving.
