- Cabbage - 200 grams, finely chopped
- Tomato - 1 medium, diced
- Carrot - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Black pepper powder - 1/4 teaspoon
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds.
- Add the chopped onion, garlic, ginger, and green chili. Sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced tomato, turmeric powder, coriander powder, and black pepper. Cook for another 2-3 minutes until the tomato softens.
- Add the chopped cabbage and carrot to the pot, mixing well with the spices. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the vegetables are tender.
- Season with salt to taste and garnish with fresh coriander leaves before serving.
