Cabbage Rolls

Ingredients
- Cabbage - 8 large leaves
- Red lentils - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Carrot - 1 medium, grated
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- BBQ sauce (dairy-free) - for brushing
Steps
- Bring a large pot of salted water to a boil. Carefully add the cabbage leaves and blanch for 2-3 minutes until slightly softened. Remove and place in cold water to stop cooking. Drain and set aside.
- In another pot, cook the red lentils in 300 ml of water until tender, about 15-20 minutes. Drain any excess water and let cool.
- In a pan, heat olive oil over medium heat. Add cumin seeds, and once they start to splutter, add the chopped onion, ginger, garlic, and green chili. Sauté until the onion is translucent.
- Add the grated carrot, chopped tomato, coriander powder, turmeric powder, salt, and black pepper. Cook for 5-7 minutes until the tomatoes are soft and the mixture is well combined.
- Add the cooked lentils to the pan and mix thoroughly. Stir in the chopped cilantro and lemon juice. Allow the mixture to cool slightly.
- Lay a cabbage leaf flat and place about 2 tablespoons of the lentil mixture near the base of the leaf. Fold in the sides and roll up tightly. Repeat with remaining leaves and filling.
- Preheat a grill or grill pan over medium heat. Brush the cabbage rolls with BBQ sauce and place them on the grill. Cook for about 10-12 minutes, turning occasionally until they are lightly charred and heated through.
- Serve warm, drizzled with additional BBQ sauce and garnished with fresh cilantro.
