Ingredients

  • Cabbage - 8 large leaves
  • Red lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Carrot - 1 medium, grated
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • BBQ sauce (dairy-free) - for brushing

Steps

  1. Bring a large pot of salted water to a boil. Carefully add the cabbage leaves and blanch for 2-3 minutes until slightly softened. Remove and place in cold water to stop cooking. Drain and set aside.
  2. In another pot, cook the red lentils in 300 ml of water until tender, about 15-20 minutes. Drain any excess water and let cool.
  3. In a pan, heat olive oil over medium heat. Add cumin seeds, and once they start to splutter, add the chopped onion, ginger, garlic, and green chili. Sauté until the onion is translucent.
  4. Add the grated carrot, chopped tomato, coriander powder, turmeric powder, salt, and black pepper. Cook for 5-7 minutes until the tomatoes are soft and the mixture is well combined.
  5. Add the cooked lentils to the pan and mix thoroughly. Stir in the chopped cilantro and lemon juice. Allow the mixture to cool slightly.
  6. Lay a cabbage leaf flat and place about 2 tablespoons of the lentil mixture near the base of the leaf. Fold in the sides and roll up tightly. Repeat with remaining leaves and filling.
  7. Preheat a grill or grill pan over medium heat. Brush the cabbage rolls with BBQ sauce and place them on the grill. Cook for about 10-12 minutes, turning occasionally until they are lightly charred and heated through.
  8. Serve warm, drizzled with additional BBQ sauce and garnished with fresh cilantro.
