Ingredients
- Cabbage - 200 grams
- Spinach - 150 grams
- Ghee - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cream - 50 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Start by preparing the cabbage noodles. Remove the outer leaves of the cabbage, cut it into quarters, and slice it thinly to create noodle-like strips.
- In a large pan, heat the ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the minced garlic, grated ginger, and chopped green chili to the pan. Sauté for 1-2 minutes until fragrant.
- Stir in the turmeric and coriander powder, mixing well before adding the spinach. Cook until the spinach wilts down, about 3-4 minutes.
- Add the cream to the spinach mixture, stirring to combine. Season with salt and black pepper to taste.
- In a separate pot, boil water and add the cabbage noodles. Cook for 3-4 minutes until tender but still firm.
- Drain the cabbage noodles and combine them with the saag mixture in the pan. Toss gently to coat the noodles evenly.
- Serve hot, garnished with additional cream or a sprinkle of black pepper if desired.
