Ingredients
- Chicken drumsticks - 6 pieces (about 900g)
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Apple cider vinegar - 2 tablespoons
- Hot sauce (Paleo-friendly) - 4 tablespoons
- Honey (optional, for sweetness) - 1 tablespoon
Steps
- In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper to create a marinade.
- Add the chicken drumsticks to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.
- Preheat your grill or oven to 200°C (400°F). If using an oven, line a baking sheet with parchment paper.
- Remove the drumsticks from the marinade and place them on the grill or baking sheet. Cook for about 25-30 minutes, turning occasionally, until they reach an internal temperature of 75°C (165°F).
- While the drumsticks are cooking, prepare the buffalo sauce by mixing apple cider vinegar, hot sauce, and honey in a small saucepan over low heat until combined.
- During the last 5 minutes of cooking, brush the buffalo sauce over the drumsticks, allowing it to caramelize slightly.
- Remove the drumsticks from the grill or oven and let them rest for a few minutes before serving.
