Ingredients

  • Ground buffalo meat - 500 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, finely chopped
  • Carrot - 1 small, grated
  • Buffalo wing sauce - 60 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine the ground buffalo meat, almond flour, egg, chopped onion, minced garlic, chopped celery, grated carrot, buffalo wing sauce, oregano, thyme, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a lightly greased loaf pan.
  4. Drizzle olive oil over the top of the meatloaf.
  5. Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 70°C (160°F).
  6. Once cooked, remove from the oven and let it rest for 10 minutes before slicing.
  7. Garnish with fresh parsley before serving.
