- Potatoes - 200 grams

- Besan (gram flour) - 1/2 cup
- Water - as needed for batter
- Baking soda - a pinch
- Bread rolls (Pav) - 2
- Oil - for frying
- Chutney (green chutney and garlic chutney) - as needed
- Coriander leaves - for garnish
Steps
- Boil the potatoes until tender, then peel and mash them in a bowl.
- Add green chilies, ginger, garlic, turmeric, coriander powder, cumin powder, garam masala, salt, and lemon juice to the mashed potatoes. Mix well to combine.
- Form the potato mixture into two equal-sized patties.
- In a separate bowl, mix besan with a pinch of salt and baking soda. Gradually add water to form a smooth batter.
- Heat oil in a deep frying pan over medium heat.
- Dip each potato patty into the besan batter, ensuring it's fully coated, and carefully place it into the hot oil.
- Fry until golden brown and crispy on both sides, about 4-5 minutes. Remove and drain on paper towels.
- Slice the bread rolls in half, and spread green chutney on one side and garlic chutney on the other.
- Place the fried vada in the center of each roll, garnish with coriander leaves, and close the roll.
- Serve immediately with extra chutney on the side.
