Ingredients

  • Potatoes - 200 grams
  • Green chilies - 2, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Besan (gram flour) - 1/2 cup
  • Water - as needed for batter
  • Baking soda - a pinch
  • Bread rolls (Pav) - 2
  • Oil - for frying
  • Chutney (green chutney and garlic chutney) - as needed
  • Coriander leaves - for garnish

Steps

  1. Boil the potatoes until tender, then peel and mash them in a bowl.
  2. Add green chilies, ginger, garlic, turmeric, coriander powder, cumin powder, garam masala, salt, and lemon juice to the mashed potatoes. Mix well to combine.
  3. Form the potato mixture into two equal-sized patties.
  4. In a separate bowl, mix besan with a pinch of salt and baking soda. Gradually add water to form a smooth batter.
  5. Heat oil in a deep frying pan over medium heat.
  6. Dip each potato patty into the besan batter, ensuring it's fully coated, and carefully place it into the hot oil.
  7. Fry until golden brown and crispy on both sides, about 4-5 minutes. Remove and drain on paper towels.
  8. Slice the bread rolls in half, and spread green chutney on one side and garlic chutney on the other.
  9. Place the fried vada in the center of each roll, garnish with coriander leaves, and close the roll.
  10. Serve immediately with extra chutney on the side.
