Ingredients

  • Pizza base - 1 large (30 cm)
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, thinly sliced
  • Bell pepper - 1 medium, thinly sliced
  • Tomato - 1 medium, diced
  • Green chili - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Chaat masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Mango chutney - 2 tablespoons
  • Dairy-free cheese - 100 grams, shredded (optional)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced red onion and bell pepper, and sauté until softened, about 5 minutes.
  4. Stir in the garlic, ginger, green chili, cumin powder, coriander powder, turmeric powder, and salt. Cook for another 2-3 minutes until fragrant.
  5. Add the diced tomato and cook until the mixture is slightly thickened, about 5 minutes. Remove from heat and stir in the chopped cilantro.
  6. Place the pizza base on a baking tray. Spread the vegetable mixture evenly over the base.
  7. If using, sprinkle the dairy-free cheese over the top.
  8. Drizzle the mango chutney over the pizza.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are golden and crispy.
  10. Remove from the oven, let it cool for a minute, slice, and serve hot.
