- Green chutney - 4 tablespoons
- Sweet tamarind chutney - 2 tablespoons
- Chaat masala - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
- Butter - 2 tablespoons, softened
Steps
- Start by preparing all the vegetables: slice the boiled potatoes, cucumber, tomato, and red onion.
- Take two slices of gluten-free bread and spread 1 tablespoon of butter on one side of each slice.
- On the unbuttered side of one slice, spread 2 tablespoons of green chutney followed by a layer of sliced potatoes.
- Sprinkle chaat masala, salt, and black pepper over the potatoes.
- Add a layer of cucumber slices, followed by tomato slices and then red onion slices, seasoning each layer with a pinch of salt and chaat masala.
- Spread 1 tablespoon of sweet tamarind chutney on the unbuttered side of another slice of bread and place it on top of the onion layer, chutney side down.
- Repeat the process to make a second sandwich with the remaining ingredients.
- In a non-stick skillet, place the sandwiches buttered side down over medium heat, pressing down gently with a spatula.
- Cook for 2-3 minutes until golden brown, then carefully flip and cook the other side for another 2-3 minutes.
- Remove from the skillet, cut each sandwich into halves or quarters, and serve immediately with extra chutneys on the side.
