- Bison ground meat - 250 grams
- Brown rice - 150 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the vegetable broth to a boil, add the rinsed rice, cover, and reduce to a simmer. Cook for about 30 minutes, or until the rice is tender and liquid is absorbed.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced bell pepper to the skillet, and cook for an additional 3-4 minutes until softened.
- Add the ground bison to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the cumin, paprika, black pepper, and salt. Cook for an additional 2 minutes to let the spices meld.
- Once the rice is cooked, fluff it with a fork and combine it with the bison mixture in the skillet. Mix well to combine all ingredients.
