Ingredients

  • Bison ground meat - 250 grams
  • Brown rice - 150 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the vegetable broth to a boil, add the rinsed rice, cover, and reduce to a simmer. Cook for about 30 minutes, or until the rice is tender and liquid is absorbed.
  3. While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and diced bell pepper to the skillet, and cook for an additional 3-4 minutes until softened.
  5. Add the ground bison to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  6. Stir in the cumin, paprika, black pepper, and salt. Cook for an additional 2 minutes to let the spices meld.
  7. Once the rice is cooked, fluff it with a fork and combine it with the bison mixture in the skillet. Mix well to combine all ingredients.
  8. Garnish with chopped fresh parsley before serving.
