Steps
- Wash the bitter gourd thoroughly and slice it thinly. Remove the seeds if desired to reduce bitterness.
- Heat coconut oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the sliced bitter gourd and sauté for about 5-7 minutes until it starts to soften.
- Mix in the chopped tomatoes along with turmeric powder, coriander powder, red chili powder, and salt. Stir well to combine.
- Cover the pan and cook for about 10-12 minutes on low heat, stirring occasionally until the bitter gourd is tender.
