  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - 1 teaspoon (adjust to taste)
  • Coconut oil - 2 tablespoons
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Wash the bitter gourd thoroughly and slice it thinly. Remove the seeds if desired to reduce bitterness.
  2. Heat coconut oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the sliced bitter gourd and sauté for about 5-7 minutes until it starts to soften.
  6. Mix in the chopped tomatoes along with turmeric powder, coriander powder, red chili powder, and salt. Stir well to combine.
  7. Cover the pan and cook for about 10-12 minutes on low heat, stirring occasionally until the bitter gourd is tender.
  8. Once cooked, adjust seasoning if necessary, and garnish with fresh cilantro before serving.
