Ingredients

  • Bitter gourd - 200 grams
  • Rice flour - 2 tablespoons
  • Chickpea flour (besan) - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Oil - for frying (or 2 tablespoons for baking)

Steps

  1. Wash the bitter gourd thoroughly and slice it thinly into circular chips.
  2. In a mixing bowl, combine rice flour, chickpea flour, turmeric powder, red chili powder, cumin powder, and salt.
  3. Add the sliced bitter gourd to the flour mixture and toss until the slices are well coated.
  4. If frying, heat oil in a pan over medium heat. Once hot, add the coated bitter gourd slices in batches and fry until they turn golden and crispy, about 5-7 minutes. Remove and drain on paper towels.
  5. If baking, preheat the oven to 200°C (400°F). Arrange the coated bitter gourd slices on a baking tray lined with parchment paper and drizzle with a little oil. Bake for 15-20 minutes, flipping halfway through until crispy.
  6. Serve the bitter gourd chips warm as a healthy snack or side dish.
