- Beef broth - 500 ml (preferably low sodium)
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Increase the heat to medium-high and add the bison stew meat, browning on all sides for about 8-10 minutes.
- Stir in the diced sweet potato, sliced carrots, and diced celery, cooking for another 5 minutes.
- Pour in the beef broth, and add thyme, rosemary, salt, black pepper, and the bay leaf.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 1 hour, stirring occasionally.
- After an hour, check the tenderness of the bison and vegetables; continue to simmer for an additional 30 minutes if needed.
