Ingredients

  • Bison stew meat - 400 grams
  • Sweet potato - 200 grams, diced
  • Carrots - 100 grams, sliced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Beef broth - 500 ml (preferably low sodium)
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Increase the heat to medium-high and add the bison stew meat, browning on all sides for about 8-10 minutes.
  4. Stir in the diced sweet potato, sliced carrots, and diced celery, cooking for another 5 minutes.
  5. Pour in the beef broth, and add thyme, rosemary, salt, black pepper, and the bay leaf.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 1 hour, stirring occasionally.
  7. After an hour, check the tenderness of the bison and vegetables; continue to simmer for an additional 30 minutes if needed.
