Steps
- Preheat your oven to 190°C (375°F).
- Peel and chop the sweet potatoes, then boil them in salted water for about 15 minutes or until tender.
- While the sweet potatoes are cooking, heat olive oil in a skillet over medium heat. Add the diced onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
