Ingredients

  • Ground bison - 300 grams
  • Sweet potatoes - 300 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Beef broth - 120 ml (or vegetable broth for a lighter option)
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut milk - 2 tablespoons (for mashed sweet potatoes)
  • Chives - for garnish (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Peel and chop the sweet potatoes, then boil them in salted water for about 15 minutes or until tender.
  3. While the sweet potatoes are cooking, heat olive oil in a skillet over medium heat. Add the diced onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
  4. Add minced garlic and ground bison to the skillet, cooking until the bison is browned, around 5-6 minutes. Stir in chopped thyme, salt, and black pepper.
  5. Pour in the beef broth and let the mixture simmer for an additional 5 minutes, allowing the flavors to combine.
  6. Once the sweet potatoes are tender, drain them and return to the pot. Add coconut milk and mash until creamy and smooth.
  7. Spread the bison and vegetable mixture evenly in a small baking dish. Top with the mashed sweet potatoes, spreading them out evenly.
  8. Place the dish in the preheated oven and bake for about 20 minutes, or until the top is slightly golden.
  9. Remove from the oven, let cool for a few minutes, and garnish with fresh chives before serving.
