Ingredients

  • Ground bison - 300 grams
  • Carrot, grated - 1 medium
  • Zucchini, grated - 1 medium
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Egg - 1 large
  • Almond flour - 50 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut aminos - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the ground bison, grated carrot, grated zucchini, chopped onion, minced garlic, egg, almond flour, oregano, thyme, salt, black pepper, coconut aminos, and chopped parsley.
  3. Mix all ingredients thoroughly until well combined.
  4. Transfer the meat mixture into a loaf pan and shape it into a loaf.
  5. Place the loaf in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 70°C (160°F).
  6. Remove from the oven and let it rest for 10 minutes before slicing.
  7. Serve warm, garnished with additional fresh parsley if desired.
