- Ground bison - 300 grams
- Carrot, grated - 1 medium
- Zucchini, grated - 1 medium
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Egg - 1 large
- Almond flour - 50 grams
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coconut aminos - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the ground bison, grated carrot, grated zucchini, chopped onion, minced garlic, egg, almond flour, oregano, thyme, salt, black pepper, coconut aminos, and chopped parsley.
- Mix all ingredients thoroughly until well combined.
- Transfer the meat mixture into a loaf pan and shape it into a loaf.
- Place the loaf in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 70°C (160°F).
- Remove from the oven and let it rest for 10 minutes before slicing.
- Serve warm, garnished with additional fresh parsley if desired.
