Ingredients

  • bison meat - 300 grams (cut into thin strips)
  • soy sauce (or coconut aminos) - 2 tablespoons
  • honey - 1 tablespoon
  • smoked paprika - 1 teaspoon
  • garlic powder - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • cayenne pepper - 1/4 teaspoon
  • salt - 1/2 teaspoon
  • liquid smoke - 1/2 teaspoon

Steps

  1. In a bowl, mix together the soy sauce, honey, smoked paprika, garlic powder, black pepper, cayenne pepper, salt, and liquid smoke until well combined.
  2. Add the bison strips to the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat your oven to 70°C (160°F). Line a baking sheet with aluminum foil and place a wire rack on top.
  4. Remove the bison from the marinade and pat dry with paper towels to remove excess liquid.
  5. Arrange the bison strips in a single layer on the wire rack, ensuring they do not touch each other.
  6. Place the baking sheet in the preheated oven and let the bison jerky dry for 4-6 hours, or until it reaches your desired level of dryness. Check periodically to avoid over-drying.
  7. Once done, remove the jerky from the oven and allow it to cool completely before storing it in an airtight container.
