- bison meat - 300 grams (cut into thin strips)
- soy sauce (or coconut aminos) - 2 tablespoons
- honey - 1 tablespoon
- smoked paprika - 1 teaspoon
- garlic powder - 1 teaspoon
- black pepper - 1/2 teaspoon
- cayenne pepper - 1/4 teaspoon
- salt - 1/2 teaspoon
- liquid smoke - 1/2 teaspoon
Steps
- In a bowl, mix together the soy sauce, honey, smoked paprika, garlic powder, black pepper, cayenne pepper, salt, and liquid smoke until well combined.
- Add the bison strips to the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
- Preheat your oven to 70°C (160°F). Line a baking sheet with aluminum foil and place a wire rack on top.
- Remove the bison from the marinade and pat dry with paper towels to remove excess liquid.
- Arrange the bison strips in a single layer on the wire rack, ensuring they do not touch each other.
- Place the baking sheet in the preheated oven and let the bison jerky dry for 4-6 hours, or until it reaches your desired level of dryness. Check periodically to avoid over-drying.
- Once done, remove the jerky from the oven and allow it to cool completely before storing it in an airtight container.
