- Bison ground meat - 250 grams
- Olive oil - 1 tablespoon
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 200 grams
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- In a large pot, heat olive oil over medium heat. Add diced red onion and sauté for about 3-5 minutes until translucent.
- Add minced garlic and diced bell pepper to the pot. Cook for another 3 minutes until the bell pepper is softened.
- Increase the heat to medium-high and add the bison ground meat. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the diced zucchini, tomato paste, canned diced tomatoes (with liquid), chili powder, cumin, paprika, salt, and black pepper.
- Bring the mixture to a simmer, then reduce heat to low. Cover and let it cook for about 20-25 minutes, stirring occasionally.
- Serve hot, garnished with fresh cilantro.
