Ingredients

  • Bison ground meat - 250 grams
  • Olive oil - 1 tablespoon
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat olive oil over medium heat. Add diced red onion and sauté for about 3-5 minutes until translucent.
  2. Add minced garlic and diced bell pepper to the pot. Cook for another 3 minutes until the bell pepper is softened.
  3. Increase the heat to medium-high and add the bison ground meat. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Stir in the diced zucchini, tomato paste, canned diced tomatoes (with liquid), chili powder, cumin, paprika, salt, and black pepper.
  5. Bring the mixture to a simmer, then reduce heat to low. Cover and let it cook for about 20-25 minutes, stirring occasionally.
  6. Serve hot, garnished with fresh cilantro.
