Ingredients

  • Ground bison - 250 grams
  • Sweet potato - 200 grams, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Coconut oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat 1 tablespoon of coconut oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Add the diced onion and garlic to the skillet and cook for another 3-4 minutes until the onion is translucent.
  4. Stir in the diced red bell pepper and zucchini, cooking for an additional 5 minutes until all vegetables are tender.
  5. Push the vegetables to one side of the skillet and add the remaining tablespoon of coconut oil to the empty side.
  6. Add the ground bison to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes.
  7. Season the mixture with cumin, paprika, salt, and black pepper, stirring everything together to combine.
  8. Cook for another 2-3 minutes, allowing the flavors to meld.
  9. Remove from heat and garnish with chopped fresh cilantro before serving.
