- Zucchini - 1 medium, diced

- Garlic - 2 cloves, minced
- Coconut oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Heat 1 tablespoon of coconut oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add the diced onion and garlic to the skillet and cook for another 3-4 minutes until the onion is translucent.
- Stir in the diced red bell pepper and zucchini, cooking for an additional 5 minutes until all vegetables are tender.
- Push the vegetables to one side of the skillet and add the remaining tablespoon of coconut oil to the empty side.
- Add the ground bison to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes.
- Season the mixture with cumin, paprika, salt, and black pepper, stirring everything together to combine.
- Cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and garnish with chopped fresh cilantro before serving.
