- Bison bones (marrow bones, neck bones) - 500 grams
- Water - 1.5 liters
- Carrots - 1 medium, chopped
- Celery - 1 stalk, chopped
- Onion - 1 medium, quartered
- Garlic - 3 cloves, smashed
- Apple cider vinegar - 2 tablespoons
- Bay leaves - 2
- Thyme - 1 teaspoon, dried
- Black peppercorns - 1 teaspoon
- Salt - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Place the bison bones on a baking sheet and roast in the oven for 30 minutes until browned.
- In a large pot, add the roasted bones, water, chopped carrots, chopped celery, quartered onion, smashed garlic, apple cider vinegar, bay leaves, dried thyme, and black peppercorns.
- Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
- Cover the pot and let it simmer for at least 4 hours, preferably up to 12 hours for maximum flavor and nutrients.
- Periodically skim off any foam or impurities that rise to the surface.
- Once finished, strain the broth through a fine mesh sieve into another pot or container.
- Season the broth with salt to taste.
- Serve hot, garnished with fresh parsley.
