Ingredients

  • Bison bones (marrow bones, neck bones) - 500 grams
  • Water - 1.5 liters
  • Carrots - 1 medium, chopped
  • Celery - 1 stalk, chopped
  • Onion - 1 medium, quartered
  • Garlic - 3 cloves, smashed
  • Apple cider vinegar - 2 tablespoons
  • Bay leaves - 2
  • Thyme - 1 teaspoon, dried
  • Black peppercorns - 1 teaspoon
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the bison bones on a baking sheet and roast in the oven for 30 minutes until browned.
  3. In a large pot, add the roasted bones, water, chopped carrots, chopped celery, quartered onion, smashed garlic, apple cider vinegar, bay leaves, dried thyme, and black peppercorns.
  4. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  5. Cover the pot and let it simmer for at least 4 hours, preferably up to 12 hours for maximum flavor and nutrients.
  6. Periodically skim off any foam or impurities that rise to the surface.
  7. Once finished, strain the broth through a fine mesh sieve into another pot or container.
  8. Season the broth with salt to taste.
  9. Serve hot, garnished with fresh parsley.
