Ingredients

  • Rice - 1 cup
  • Toor Dal (split pigeon peas) - 1/2 cup
  • Mixed Vegetables (carrots, beans, peas) - 1 cup
  • Onion - 1 medium, chopped
  • Tomato - 1 medium, chopped
  • Green Chilies - 2, slit
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Bisi Bele Khichdi Masala - 2 tablespoons
  • Turmeric Powder - 1/2 teaspoon
  • Mustard Seeds - 1 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Curry Leaves - 10 leaves
  • Ghee or Oil - 2 tablespoons
  • Salt - to taste
  • Water - 4 cups
  • Fresh Coriander - for garnish

Steps

  1. Rinse the rice and toor dal together under running water until the water runs clear. Soak them in water for 30 minutes, then drain.
  2. In a large pot or pressure cooker, heat ghee or oil over medium heat. Add mustard seeds, cumin seeds, and let them splutter.
  3. Add curry leaves, chopped onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
  4. Stir in the chopped tomatoes and cook until soft. Add the mixed vegetables and sauté for a few minutes.
  5. Add the soaked rice and dal to the pot, along with turmeric powder, Bisi Bele Khichdi masala, and salt. Mix well.
  6. Pour in 4 cups of water and stir to combine. If using a pressure cooker, close the lid and cook for 3 whistles. If using a regular pot, cover and simmer for about 20-25 minutes, or until the rice and dal are cooked through and soft.
  7. Once cooked, stir the khichdi gently to combine. Adjust the consistency with more water if desired.
  8. Garnish with fresh coriander and serve hot.
