- Rice - 1 cup
- Toor Dal (split pigeon peas) - 1/2 cup
- Mixed Vegetables (carrots, beans, peas) - 1 cup
- Onion - 1 medium, chopped
- Tomato - 1 medium, chopped
- Green Chilies - 2, slit
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Bisi Bele Khichdi Masala - 2 tablespoons
- Turmeric Powder - 1/2 teaspoon
- Mustard Seeds - 1 teaspoon
- Cumin Seeds - 1 teaspoon
- Curry Leaves - 10 leaves
- Ghee or Oil - 2 tablespoons
- Salt - to taste
- Water - 4 cups
- Fresh Coriander - for garnish
Steps
- Rinse the rice and toor dal together under running water until the water runs clear. Soak them in water for 30 minutes, then drain.
- In a large pot or pressure cooker, heat ghee or oil over medium heat. Add mustard seeds, cumin seeds, and let them splutter.
- Add curry leaves, chopped onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
- Stir in the chopped tomatoes and cook until soft. Add the mixed vegetables and sauté for a few minutes.
- Add the soaked rice and dal to the pot, along with turmeric powder, Bisi Bele Khichdi masala, and salt. Mix well.
- Pour in 4 cups of water and stir to combine. If using a pressure cooker, close the lid and cook for 3 whistles. If using a regular pot, cover and simmer for about 20-25 minutes, or until the rice and dal are cooked through and soft.
- Once cooked, stir the khichdi gently to combine. Adjust the consistency with more water if desired.
- Garnish with fresh coriander and serve hot.
