Ingredients

  • Pizza dough - 200 grams
  • Basmati rice - 100 grams
  • Water - 250 ml
  • Mixed vegetables (carrots, peas, bell peppers) - 100 grams
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Biryani masala - 2 teaspoons
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro (coriander leaves) - a handful, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pot, combine the basmati rice and water with a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15 minutes until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
  3. In a pan, heat olive oil over medium heat. Add the sliced onion and sauté until golden brown.
  4. Add the minced garlic and grated ginger to the pan, cooking for an additional minute until fragrant.
  5. Stir in the mixed vegetables, diced tomato, biryani masala, cumin powder, turmeric, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.
  6. Combine the cooked rice with the vegetable mixture and mix well. Stir in chopped cilantro.
  7. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  8. Transfer the rolled dough to a baking sheet and spread the biryani mixture evenly on top. If using, sprinkle vegan cheese over the top.
  9. Bake in the preheated oven for 12-15 minutes until the edges are crispy and the cheese is melted (if using).
  10. Remove from the oven, let it cool slightly, slice, and serve hot.
