- Pizza dough - 200 grams
- Basmati rice - 100 grams
- Water - 250 ml
- Mixed vegetables (carrots, peas, bell peppers) - 100 grams
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Biryani masala - 2 teaspoons
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cilantro (coriander leaves) - a handful, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- In a pot, combine the basmati rice and water with a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15 minutes until the rice is cooked and water is absorbed. Fluff with a fork and set aside.
- In a pan, heat olive oil over medium heat. Add the sliced onion and sauté until golden brown.
- Add the minced garlic and grated ginger to the pan, cooking for an additional minute until fragrant.
- Stir in the mixed vegetables, diced tomato, biryani masala, cumin powder, turmeric, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.
- Combine the cooked rice with the vegetable mixture and mix well. Stir in chopped cilantro.
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a baking sheet and spread the biryani mixture evenly on top. If using, sprinkle vegan cheese over the top.
- Bake in the preheated oven for 12-15 minutes until the edges are crispy and the cheese is melted (if using).
- Remove from the oven, let it cool slightly, slice, and serve hot.
