Ingredients

  • Basmati rice - 150 grams
  • Chicken, boneless - 200 grams
  • Yogurt - 100 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cardamom pods - 2
  • Cloves - 2
  • Bay leaf - 1
  • Cilantro, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Oil or ghee - 3 tablespoons
  • Salt - to taste
  • Water - 400 ml
  • Pakwan (flatbread) - 2 pieces

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes. Drain and set aside.
  2. In a bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, and salt. Let it sit for at least 20 minutes.
  3. Heat oil or ghee in a large pot over medium heat. Add cumin seeds, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
  4. Add the sliced onions and sauté until golden brown. Then, add the chopped tomatoes and cook until they soften.
  5. Add the marinated chicken to the pot and cook for about 10 minutes, stirring occasionally until the chicken is browned and cooked through.
  6. Add the soaked rice to the pot and gently mix it with the chicken and spices. Pour in the water and bring it to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  8. In a separate pan, heat a little oil and fry the pakwan until crispy and golden brown. Drain on paper towels.
  9. Once the biryani is done, fluff it with a fork and garnish with chopped cilantro and mint leaves.
  10. Serve the biryani hot, accompanied by crispy pakwan on the side.
