Ingredients

  • Basmati rice - 100 grams
  • Potato - 100 grams, boiled and mashed
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Biryani masala - 1 tablespoon
  • Coriander leaves - 2 tablespoons, chopped
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 25 grams
  • Salt - to taste
  • Water - as needed
  • Oil - for frying

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a mixing bowl, combine the boiled and mashed potato, chopped onion, green chili, ginger-garlic paste, biryani masala, and chopped coriander leaves. Mix well.
  3. Add the soaked and drained basmati rice to the mixture and combine gently.
  4. In a separate bowl, mix chickpea flour, rice flour, and salt. Gradually add water to form a thick batter.
  5. Fold the rice and potato mixture into the batter until evenly coated.
  6. Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the mixture into the oil, frying in batches.
  7. Fry the pakoras until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
  8. Serve hot with mint chutney or yogurt dip.
