- Basmati rice - 100 grams
- Potato - 100 grams, boiled and mashed
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Biryani masala - 1 tablespoon
- Coriander leaves - 2 tablespoons, chopped
- Chickpea flour (besan) - 50 grams
- Rice flour - 25 grams
- Salt - to taste
- Water - as needed
- Oil - for frying
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a mixing bowl, combine the boiled and mashed potato, chopped onion, green chili, ginger-garlic paste, biryani masala, and chopped coriander leaves. Mix well.
- Add the soaked and drained basmati rice to the mixture and combine gently.
- In a separate bowl, mix chickpea flour, rice flour, and salt. Gradually add water to form a thick batter.
- Fold the rice and potato mixture into the batter until evenly coated.
- Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the mixture into the oil, frying in batches.
- Fry the pakoras until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
- Serve hot with mint chutney or yogurt dip.
