Biryani Kebab is a delightful fusion dish that combines the rich flavors of traditional biryani with juicy kebabs, making it a perfect meal for any occasion. Each bite is a burst of aromatic spices and tender meat, served alongside fragrant basmati rice.

Ingredients
- Basmati rice - 150 grams
- Chicken (boneless, diced) - 200 grams
- Onion (finely sliced) - 1 medium
- Garlic paste - 1 teaspoon
- Ginger paste - 1 teaspoon
- Yogurt - 2 tablespoons
- Biryani masala - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 1 tablespoon
- Green chili (slit) - 1
- Lemon juice - 1 tablespoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 300 milliliters
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, combine the diced chicken, yogurt, garlic paste, ginger paste, biryani masala, lemon juice, garam masala, and salt. Mix well and marinate for at least 20 minutes.
- Heat 1 tablespoon of oil in a pan over medium heat, add the sliced onions, and sauté until golden brown. Remove half for garnishing.
- In the same pan, add the marinated chicken and cook until it's fully cooked and tender, about 10-15 minutes. Stir occasionally.
- In a separate pot, bring 300ml of water to a boil. Add the soaked rice and cook until it's 70% done. Drain the rice and set aside.
- Once the chicken is cooked, layer half of the rice over the chicken in the pan. Then sprinkle half of the cilantro, mint, and some of the sautéed onions on top.
- Add the remaining rice and repeat the layering with the rest of the cilantro, mint, and onions. Cover the pan with a lid and let it cook on low heat for 15 minutes to allow the flavors to meld.
- While the biryani is cooking, thread the remaining marinated chicken onto the skewers.
- In a separate skillet, heat the remaining oil and grill the kebabs on medium heat until they are golden and cooked through, about 5-7 minutes.
- Serve the biryani hot, garnished with the grilled kebabs and additional cilantro and mint.
