Biryani Kachori

Ingredients

  • All-purpose flour - 150 grams
  • Salt - 1/2 teaspoon
  • Water - 50 ml (adjust as needed)
  • Cooked basmati rice - 200 grams
  • Mixed vegetables (peas, carrots, potatoes) - 100 grams, finely chopped
  • Onion - 1 medium, finely sliced
  • Ginger-garlic paste - 1 teaspoon
  • Biryani masala - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Green chilies - 1, finely chopped
  • Cooking oil - for frying
  • Lemon juice - 1 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead into a smooth dough. Cover and set aside for 30 minutes.
  2. In a pan, heat a tablespoon of oil over medium heat. Add sliced onions and sauté until golden brown. Add ginger-garlic paste and green chilies, cooking for another minute.
  3. Add the mixed vegetables and cook until tender. Stir in the cooked basmati rice, biryani masala, cilantro, and lemon juice. Mix well and cook for an additional 2-3 minutes. Remove from heat and let it cool.
  4. Divide the dough into small balls. Roll each ball into a small circle about 10 cm in diameter. Place a spoonful of the rice mixture in the center and fold the edges over to seal, forming a kachori.
  5. Heat oil in a deep frying pan over medium heat. Fry the kachoris until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.
  6. Serve hot with mint chutney or yogurt.
