Ingredients

  • Basmati rice - 200 grams
  • Chicken, cut into pieces - 250 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Plain yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies, slit - 2
  • Cilantro (coriander leaves), chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cooking oil - 3 tablespoons
  • Salt - to taste
  • Water - 400 ml
  • Lemon juice - 1 tablespoon
  • Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, salt, and lemon juice. Let it marinate for at least 20 minutes.
  3. Heat oil in a heavy-bottomed pot over medium heat. Add sliced onions and fry until golden brown. Remove half for garnishing.
  4. Add the marinated chicken to the pot and cook until the chicken is browned.
  5. Stir in the chopped tomatoes, green chilies, chopped cilantro, and mint leaves. Cook for another 5 minutes until the tomatoes soften.
  6. Add the soaked rice to the pot, followed by whole spices (bay leaf, cloves, cardamom, cinnamon) and water. Adjust salt if necessary.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot tightly and cook for about 20 minutes, or until the rice is cooked through and has absorbed all the liquid.
  8. Once cooked, fluff the biryani gently with a fork. Garnish with the reserved fried onions and fresh herbs before serving.
