Ingredients
- Basmati rice - 200 grams
- Lamb or goat meat (bone-in) - 300 grams
- Onion (thinly sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 tablespoons
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Green cardamom - 2 pods
- Cloves - 2 whole
- Cinnamon stick - 1 small piece
- Bay leaf - 1
- Mint leaves (fresh) - 10 leaves
- Cilantro (fresh) - 10 leaves
- Oil (vegetable or ghee) - 3 tablespoons
- Salt - to taste
- Water - 500 milliliters
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and cook for 1-2 minutes until fragrant.
- Stir in the chopped tomatoes, biryani masala, red chili powder, turmeric powder, and salt. Cook until the tomatoes soften.
- Add the meat to the pot and mix well, allowing it to coat with the spices. Cook for 5-7 minutes, stirring occasionally.
- Lower the heat and add yogurt, mixing thoroughly. Cover and cook for 20 minutes, until the meat is tender.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked rice and cook until the rice is 70% done (about 5-6 minutes). Drain the rice and set aside.
- Once the meat is tender, layer the partially cooked rice on top of the meat, adding the green cardamom, cloves, cinnamon stick, bay leaf, mint, and cilantro.
- Cover the pot tightly with a lid and cook on low heat for 25-30 minutes, allowing the flavors to meld and the rice to finish cooking.
- Remove from heat and let it rest for 10 minutes before serving. Gently fluff the biryani with a fork and serve hot.
