Ingredients

  • Whole wheat flour - 1 cup
  • Jaggery (grated) - 1/2 cup
  • Coconut (grated) - 1/4 cup
  • Ginger (grated) - 1 tsp
  • Cardamom powder - 1/4 tsp
  • Water - as needed
  • Ghee or oil - for frying

Steps

  1. In a mixing bowl, combine whole wheat flour, grated jaggery, grated coconut, grated ginger, and cardamom powder.
  2. Mix the dry ingredients well and gradually add water to form a soft dough. Knead for about 5 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rest for 10 minutes.
  4. Divide the dough into small balls and flatten each ball into a disc, about 1/4 inch thick.
  5. Heat ghee or oil in a deep pan over medium heat.
  6. Once hot, carefully add the discs to the oil, frying until they turn golden brown on both sides.
  7. Remove the Thekua and drain on paper towels to absorb excess oil.
  8. Serve warm or at room temperature.
