- Rice flour - 1 cup
- Water - 3/4 cup
- Fresh grated coconut - 1/2 cup
- Jaggery (grated) - 1/3 cup
- Cardamom powder - 1/2 teaspoon
- Salt - a pinch
- Ghee (for greasing and cooking) - 1 tablespoon
Steps
- In a mixing bowl, combine rice flour and a pinch of salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 10 minutes.
- In another bowl, mix grated coconut, jaggery, and cardamom powder until well combined.
- Take a small portion of the dough (about the size of a golf ball) and flatten it in your palm to form a small disc.
- Place a tablespoon of the coconut-jaggery mixture in the center of the disc, then fold the edges over to seal it completely, forming a dumpling.
- Repeat the process with the remaining dough and filling.
- Heat ghee in a non-stick pan over medium heat. Place the dumplings in the pan and cook for about 5-7 minutes on each side until they are golden brown.
- Serve warm, drizzled with a little extra ghee if desired.
