Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Onion (finely sliced) - 2 medium
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies (slit) - 2
  • Tomato (chopped) - 1 medium
  • Yogurt (plain) - 100 grams
  • Mustard oil - 3 tablespoons
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro (chopped) - for garnish
  • Water - 2 cups

Steps

  1. Heat mustard oil in a heavy-bottomed pot over medium heat until it starts to smoke slightly.
  2. Add the finely sliced onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until aromatic.
  4. Add the chopped tomato and cook until it softens and breaks down, about 5 minutes.
  5. Mix in the turmeric powder, red chili powder, coriander powder, and cumin powder; stir well to combine.
  6. Add the mutton pieces to the pot, stirring to coat them in the spice mixture.
  7. Cook the mutton on high heat for about 5-7 minutes until they are browned on all sides.
  8. Reduce the heat to low and add the yogurt, mixing thoroughly to combine with the mutton.
  9. Add salt to taste and pour in 2 cups of water; bring the mixture to a boil.
  10. Cover the pot and let it simmer on low heat for about 60-70 minutes, or until the mutton is tender and cooked through.
  11. Once done, sprinkle garam masala over the curry and garnish with fresh cilantro before serving.
