Ingredients
- Mutton (bone-in, cut into pieces) - 500 grams
- Onion (finely sliced) - 2 medium
- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Tomato (chopped) - 1 medium
- Yogurt (plain) - 100 grams
- Mustard oil - 3 tablespoons
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 tablespoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh cilantro (chopped) - for garnish
- Water - 2 cups
Steps
- Heat mustard oil in a heavy-bottomed pot over medium heat until it starts to smoke slightly.
- Add the finely sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until aromatic.
- Add the chopped tomato and cook until it softens and breaks down, about 5 minutes.
- Mix in the turmeric powder, red chili powder, coriander powder, and cumin powder; stir well to combine.
- Add the mutton pieces to the pot, stirring to coat them in the spice mixture.
- Cook the mutton on high heat for about 5-7 minutes until they are browned on all sides.
- Reduce the heat to low and add the yogurt, mixing thoroughly to combine with the mutton.
- Add salt to taste and pour in 2 cups of water; bring the mixture to a boil.
- Cover the pot and let it simmer on low heat for about 60-70 minutes, or until the mutton is tender and cooked through.
- Once done, sprinkle garam masala over the curry and garnish with fresh cilantro before serving.
