- Ginger - 1 inch, grated

- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard oil - 1 tablespoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Cilantro - a handful, chopped (for garnish)
Steps
- Wash the fresh fenugreek leaves thoroughly to remove any dirt and grit, then chop them coarsely and set aside.
- In a pan, heat the mustard oil over medium heat until it is hot, then add the cumin seeds and allow them to splutter.
- Add the finely chopped onion to the pan and sauté until it turns golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another minute until fragrant.
- Add the chopped tomato, turmeric powder, red chili powder, and salt, cooking until the tomatoes soften and the oil begins to separate.
- Mix in the chopped fenugreek leaves and stir well. Cook for about 5-7 minutes until the leaves wilt and reduce in volume.
- Remove from heat, add lemon juice, and mix well.
- Garnish with chopped cilantro before serving.
