Ingredients

  • Whole wheat flour - 200 grams
  • Baking soda - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 100 ml (for dough)
  • Ghee (or oil) - 2 tablespoons (for brushing)
  • Brinjal (eggplant) - 1 medium, roasted and mashed
  • Tomato - 1 medium, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Green chili - 1, finely chopped
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Cooked basmati rice - 300 grams
  • Fresh coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine whole wheat flour, baking soda, and salt. Gradually add water and knead until a smooth and pliable dough forms. Cover and let it rest for 30 minutes.
  2. For the chokha, roast the brinjal over an open flame until charred. Once cool, peel and mash it in a bowl. Add chopped tomato, onion, garlic, green chili, coriander powder, cumin powder, turmeric powder, and salt. Mix well and set aside.
  3. Preheat the oven to 180°C (350°F). Divide the rested dough into equal portions and shape each portion into a ball. Flatten slightly and make a small indentation in the center.
  4. Place the balls on a baking tray and brush them with ghee or oil. Bake in the preheated oven for approximately 20 minutes, turning halfway through, until golden brown.
  5. While the litti is baking, prepare the rice if not already cooked. Fluff the cooked basmati rice with a fork.
  6. Once the litti is done, serve hot alongside the chokha and basmati rice, garnished with fresh coriander leaves.
