- Whole wheat flour - 200 grams
- Baking soda - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 100 ml (for dough)
- Ghee (or oil) - 2 tablespoons (for brushing)
- Brinjal (eggplant) - 1 medium, roasted and mashed
- Tomato - 1 medium, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Cooked basmati rice - 300 grams
- Fresh coriander leaves - for garnish
Steps
- In a mixing bowl, combine whole wheat flour, baking soda, and salt. Gradually add water and knead until a smooth and pliable dough forms. Cover and let it rest for 30 minutes.
- For the chokha, roast the brinjal over an open flame until charred. Once cool, peel and mash it in a bowl. Add chopped tomato, onion, garlic, green chili, coriander powder, cumin powder, turmeric powder, and salt. Mix well and set aside.
- Preheat the oven to 180°C (350°F). Divide the rested dough into equal portions and shape each portion into a ball. Flatten slightly and make a small indentation in the center.
- Place the balls on a baking tray and brush them with ghee or oil. Bake in the preheated oven for approximately 20 minutes, turning halfway through, until golden brown.
- While the litti is baking, prepare the rice if not already cooked. Fluff the cooked basmati rice with a fork.
- Once the litti is done, serve hot alongside the chokha and basmati rice, garnished with fresh coriander leaves.
