Ingredients

  • Whole wheat flour - 200 grams
  • Ghee (clarified butter) - 2 tablespoons
  • Water - 100 ml
  • Baking soda - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Stuffing: Sattu (roasted gram flour) - 100 grams
  • Onion (finely chopped) - 1 medium
  • Ginger (grated) - 1 teaspoon
  • Green chili (finely chopped) - 1
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Brinjal (eggplant) - 1 medium
  • Tomato - 1 medium
  • Potato - 1 medium
  • Garlic (finely chopped) - 2 cloves
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Mustard oil - 1 tablespoon

Steps

  1. In a bowl, mix whole wheat flour, ghee, baking soda, salt, and water to form a soft dough. Let it rest for 20 minutes.
  2. For the stuffing, mix sattu, chopped onion, grated ginger, green chili, coriander leaves, lemon juice, and salt in a bowl. Set aside.
  3. Preheat the oven to 180°C (350°F).
  4. Divide the dough into equal portions and flatten each piece into a disc. Place a spoonful of the sattu mixture in the center and seal it, rolling it into a ball.
  5. Place the balls on a baking tray and bake for 25-30 minutes until golden brown.
  6. Meanwhile, prepare the chokha by roasting the brinjal, tomato, and potato over an open flame or in the oven until charred. Peel and mash them in a bowl.
  7. Add chopped garlic, cumin seeds, turmeric powder, red chili powder, and salt to the mashed vegetables. Drizzle with mustard oil and mix well.
  8. Serve the baked littis hot with chokha on the side.
