Ingredients

  • Buckwheat flour - 1 cup
  • Water - 1/4 cup (or as needed)
  • Salt - 1/2 teaspoon
  • Ghee (or oil) - 2 tablespoons
  • Sattu (roasted gram flour) - 1/2 cup
  • Onion (finely chopped) - 1 small
  • Green chili (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Black salt - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Water for chokha - as needed
  • Eggplant (baingan) - 1 medium
  • Tomato - 1 medium
  • Potato - 1 medium
  • Coriander leaves (chopped) - for garnish

Steps

  1. In a mixing bowl, combine buckwheat flour and salt. Gradually add water to form a soft dough, then cover and let it rest for 15 minutes.
  2. In another bowl, mix sattu, chopped onion, green chili, ginger, garlic, cumin powder, black salt, and lemon juice to form a filling.
  3. Divide the dough into equal portions and flatten each portion into a small disc. Place a spoonful of the filling in the center and fold the dough over to enclose the filling, rolling it back into a ball shape.
  4. Preheat the oven to 180°C (350°F). Place the stuffed littis on a baking tray and brush them lightly with ghee. Bake for 25-30 minutes or until they are golden brown.
  5. For the chokha, roast the eggplant, tomato, and potato over an open flame or in the oven until charred and soft. Allow them to cool, then peel and mash together in a bowl.
  6. Add chopped coriander leaves, salt, and a bit of lemon juice to the mashed vegetables for flavor.
  7. Serve the hot littis with the chokha on the side, garnished with additional coriander.
