- Raisins - 1 tablespoon
- Saffron strands - a pinch
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 15 minutes, then drain.
- In a heavy-bottomed pan, heat the ghee over medium heat. Add the chopped nuts and raisins, sautéing until the nuts are golden and the raisins are plump.
- Add the soaked and drained rice to the pan, stirring gently to coat the rice with ghee and toast it lightly for about 2 minutes.
- Pour in the milk and bring to a gentle boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, stirring occasionally until the rice is cooked and the mixture thickens.
- Stir in the sugar, cardamom powder, and saffron strands. Cook for an additional 2-3 minutes until the sugar dissolves completely.
