  • Chopped nuts (cashews, almonds) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Saffron strands - a pinch

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 15 minutes, then drain.
  2. In a heavy-bottomed pan, heat the ghee over medium heat. Add the chopped nuts and raisins, sautéing until the nuts are golden and the raisins are plump.
  3. Add the soaked and drained rice to the pan, stirring gently to coat the rice with ghee and toast it lightly for about 2 minutes.
  4. Pour in the milk and bring to a gentle boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, stirring occasionally until the rice is cooked and the mixture thickens.
  5. Stir in the sugar, cardamom powder, and saffron strands. Cook for an additional 2-3 minutes until the sugar dissolves completely.
  6. Remove from heat and let it sit for a few minutes before serving. Enjoy warm or chilled.
