Ingredients

  • Minced lamb or beef - 300 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, finely chopped
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons (for brushing)
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a large mixing bowl, combine minced lamb or beef with finely chopped onion, ginger-garlic paste, green chilies, coriander leaves, garam masala, cumin powder, coriander powder, red chili powder, salt, black pepper, lemon juice, and beaten egg.
  2. Mix all the ingredients thoroughly until well combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Preheat your grill or BBQ to medium-high heat. If using wooden skewers, ensure they have been soaked in water to prevent burning.
  4. Take a portion of the marinated meat mixture and mold it onto each skewer, pressing down firmly to ensure it adheres well.
  5. Brush the kebabs lightly with olive oil to help them brown nicely.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have a nice char.
  7. Once cooked, remove from the grill and let them rest for a couple of minutes before serving.
  8. Serve hot with a side of mint chutney and sliced onions for an authentic touch.
