- Onion (finely chopped) - 1 medium (150 grams)
- Tomato (chopped) - 1 medium (100 grams)
- Coconut milk - 200 ml
- Mustard oil - 2 tablespoons
- Ginger-garlic paste - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves (for garnishing) - a handful
Steps
- Heat mustard oil in a pan over medium heat until it is hot.
- Add the finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Mix in the turmeric powder, red chili powder, coriander powder, and cumin powder, and sauté for about 2 minutes.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add salt to taste and then carefully add the fish pieces to the curry.
- Cook the fish for about 8-10 minutes on low heat, spooning the sauce over the fish occasionally until the fish is cooked through.
- Sprinkle garam masala over the curry and mix gently.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
