  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Water - as needed
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine the flattened rice (chura), chickpea flour (besan), grated potato, sliced onion, grated carrot, chopped green chili, and chopped coriander leaves.
  2. Add cumin seeds, turmeric powder, red chili powder, and salt to the mixture. Mix well to combine all the ingredients.
  3. Gradually add water to the mixture to form a thick batter that can hold its shape but is not too runny.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once the oil is hot, carefully drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan.
  6. Fry the pakoras until they turn golden brown and crispy, about 4-5 minutes on each side.
  7. Remove the pakoras with a slotted spoon and drain on paper towels to remove excess oil.
