  • Green chilies - 2, finely chopped
  • Ginger - 1-inch piece, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - a handful, finely chopped
  • Oil - for frying
  • Lemon juice - 1 tablespoon
  • Chutney (green or tamarind) - for serving

Steps

  1. Start by boiling the potatoes until tender. Once cooked, peel and mash them in a bowl.
  2. In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped green chilies and grated ginger to the pan, sautéing for a minute until fragrant.
  4. Stir in the turmeric powder, red chili powder, and salt, cooking for another 30 seconds.
  5. Combine the sautéed mixture with the mashed potatoes, mixing well. Add chopped coriander leaves and lemon juice, then form small vadas (fritters) from the mixture.
  6. Heat oil in a deep pan for frying. Once hot, carefully drop the vadas into the oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
  7. In a serving bowl, take the flattened rice (chura) and lightly toast it in a pan for 2-3 minutes until warm.
  8. Serve the hot vadas on a bed of chura, accompanied by your choice of chutney.
