- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - a handful, finely chopped
- Oil - for frying
- Lemon juice - 1 tablespoon
- Chutney (green or tamarind) - for serving
Steps
- Start by boiling the potatoes until tender. Once cooked, peel and mash them in a bowl.
- In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped green chilies and grated ginger to the pan, sautéing for a minute until fragrant.
- Stir in the turmeric powder, red chili powder, and salt, cooking for another 30 seconds.
- Combine the sautéed mixture with the mashed potatoes, mixing well. Add chopped coriander leaves and lemon juice, then form small vadas (fritters) from the mixture.
- Heat oil in a deep pan for frying. Once hot, carefully drop the vadas into the oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
- In a serving bowl, take the flattened rice (chura) and lightly toast it in a pan for 2-3 minutes until warm.
- Serve the hot vadas on a bed of chura, accompanied by your choice of chutney.
