Ingredients
- Flattened rice (chura) - 1 cup
- Besan (gram flour) - 1/2 cup
- Rice flour - 1/4 cup
- Yogurt - 1/4 cup
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Salt - 1/2 teaspoon
- Fresh coriander leaves, chopped - 2 tablespoons
- Water - as needed
- Oil - for cooking
Steps
- In a large mixing bowl, combine the flattened rice, besan, rice flour, yogurt, turmeric powder, cumin powder, red chili powder, ginger paste, and salt.
- Mix these ingredients well until they form a dough. Add water gradually if the mixture is too dry.
- Once the dough is formed, knead it for about 2-3 minutes until it is smooth and pliable.
- Cover the dough with a damp cloth and let it rest for about 10 minutes.
- After resting, divide the dough into equal portions and roll each portion into a ball.
- On a clean surface, flatten each ball with your palms and then use a rolling pin to roll it out into thin circles (about 6 inches in diameter).
- Heat a non-stick skillet or tawa over medium heat and add a little oil.
- Place one rolled-out thepla on the skillet and cook for about 2 minutes or until small bubbles form on the surface.
- Flip the thepla and cook for another 1-2 minutes, adding oil around the edges if desired, until golden brown.
- Repeat the process with the remaining dough, stacking the cooked theplas on a plate.
- Serve hot with yogurt or pickle.
