Ingredients

  • Flattened rice (chura) - 1 cup
  • Besan (gram flour) - 1/2 cup
  • Rice flour - 1/4 cup
  • Yogurt - 1/4 cup
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Water - as needed
  • Oil - for cooking

Steps

  1. In a large mixing bowl, combine the flattened rice, besan, rice flour, yogurt, turmeric powder, cumin powder, red chili powder, ginger paste, and salt.
  2. Mix these ingredients well until they form a dough. Add water gradually if the mixture is too dry.
  3. Once the dough is formed, knead it for about 2-3 minutes until it is smooth and pliable.
  4. Cover the dough with a damp cloth and let it rest for about 10 minutes.
  5. After resting, divide the dough into equal portions and roll each portion into a ball.
  6. On a clean surface, flatten each ball with your palms and then use a rolling pin to roll it out into thin circles (about 6 inches in diameter).
  7. Heat a non-stick skillet or tawa over medium heat and add a little oil.
  8. Place one rolled-out thepla on the skillet and cook for about 2 minutes or until small bubbles form on the surface.
  9. Flip the thepla and cook for another 1-2 minutes, adding oil around the edges if desired, until golden brown.
  10. Repeat the process with the remaining dough, stacking the cooked theplas on a plate.
  11. Serve hot with yogurt or pickle.
