Ingredients

  • Flattened rice (chura) - 100 grams
  • Potato - 1 medium, boiled and mashed
  • Green peas - 50 grams, boiled
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Oil - for frying
  • Rice flour - 50 grams (for the outer layer)
  • Water - as needed

Steps

  1. In a bowl, soak the flattened rice in water for 5 minutes, then drain and set aside.
  2. In a pan, heat 1 tablespoon of oil and add cumin seeds, letting them splutter.
  3. Add the chopped onion and sauté until translucent, then add the grated ginger and green chili, cooking for another minute.
  4. Stir in the boiled potatoes, green peas, coriander powder, turmeric powder, and salt, mixing well. Cook for 3-4 minutes, then add the soaked chura and combine everything thoroughly. Remove from heat and let the filling cool.
  5. In a separate bowl, mix rice flour with enough water to form a pliable dough. Divide the dough into small balls.
  6. On a clean surface, flatten each dough ball into a thin disc using a rolling pin.
  7. Place a small portion of the filling in the center of each disc, then fold over to form a semi-circle, sealing the edges by pressing them together.
  8. Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches and fry until golden brown and crispy, about 4-5 minutes on each side.
  9. Remove the samosas and drain on paper towels. Serve hot with your favorite chutney.
