Ingredients
- Flattened rice (chura) - 100 grams
- Potato - 1 medium, boiled and mashed
- Green peas - 50 grams, boiled
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Oil - for frying
- Rice flour - 50 grams (for the outer layer)
- Water - as needed
Steps
- In a bowl, soak the flattened rice in water for 5 minutes, then drain and set aside.
- In a pan, heat 1 tablespoon of oil and add cumin seeds, letting them splutter.
- Add the chopped onion and sauté until translucent, then add the grated ginger and green chili, cooking for another minute.
- Stir in the boiled potatoes, green peas, coriander powder, turmeric powder, and salt, mixing well. Cook for 3-4 minutes, then add the soaked chura and combine everything thoroughly. Remove from heat and let the filling cool.
- In a separate bowl, mix rice flour with enough water to form a pliable dough. Divide the dough into small balls.
- On a clean surface, flatten each dough ball into a thin disc using a rolling pin.
- Place a small portion of the filling in the center of each disc, then fold over to form a semi-circle, sealing the edges by pressing them together.
- Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches and fry until golden brown and crispy, about 4-5 minutes on each side.
- Remove the samosas and drain on paper towels. Serve hot with your favorite chutney.
